			<content:encoded><![CDATA[<p><strong>Garden update, Early May, 2012: Noreen&#8217;s Kitchen</strong><br />
Greetings! the garden planting is finally done and now we play the tending and waiting game.<br />
Squash is looking good and starting to set fruits.<br />
Tomatoes are shooting up fast and proving that the rock phosphate is just the ticket to encourage growth!<br />
Cucumbers are trying hard to grow, and as usual, I am having a challenge.<br />
Broccoli, Califlower and cabbage are growing great.<br />
Peppers, peppers and more peppers. I am the pepper queen, after all!<br />
Transplanted some heads of romaine lettuce just to see if I could get them to grow. We shall see.<br />
Also planted some spinach that is a slow bolting variety.<br />
Herbs! Valerian,, Comfrey, Wormwood, Chamomile, St. Johns Wort, Chocolate Mint, Lemon Verbena, Lemon Balm, Spearmint, Cat Nip, Tarrgon, Sage, Bay, Rosemary and Burnett. Oh Boy are we on our way!</p>
<p>And if all that weren&#8217;t enough, my Meyer lemon tree, which needs to be repotted, has 10 count them 10 lemons coming on! I am so excited!<br />

This delicious banana bread is a great way to use over-ripe bananas. The chocolate morsels are a nice surprise in every bite. The nuts are optional. Sometimes I use walnuts and other times pecans. Give this recipe a try. You won&#8217;t believe how easy it is to make.<br />

<p><strong>CHOCOLATE BANANA BREAD</strong><br />
1/2 cup shortening<br />
1 cup sugar<br />
1 egg<br />
1 teaspoon vanilla<br />
1 tablespoon mayonnaise<br />
3 medium bananas, mashed<br />
1 1/2 cup flour<br />
1/4 cup coca powder<br />
1/2 teaspoon baking powder<br />
1 teaspoon baking soda<br />
1/4 teaspoon salt<br />
1/2 cup chocolate morsels<br />
1/4 cup chopped pecans or walnuts, optional</p>
<p>Cream shortening and sugar. Add egg, mayonnaise, bananas and vanilla. Mix until combined. Add remaining ingredients and stir until mixed. Pour into prepared loaf pan.</p>
<p>Bake at 350 degrees for 70 minutes, or until toothpick inserted into center of loaf comes out clean. Remove from oven and let cool for 15 minutes. Turn out of pan and cool on a rack until completely cooled.</p>

The rising time seems to be in question but his end result looks pretty good. I really like the idea of the use of corn meal on the bottom of loaf. This is one I will have to try.</p>
